Hand Made, Small Batch Sheep & Goat Cheeses

Since purchasing our property in 2015, we have been working hard to become a licensed dairy.  In July 2023 we achieved our goal. Today, we offer a unique selection of sheep and goat milk cheese, all of which are produced from start to finish right here on our farm.

We strongly believe happy animals make the best milk, which makes the best cheese. Our 12 goats and 20 sheep are milked seasonally, following their natural breeding cycles. Our dairy herd is raised on hay and pasture with small amounts of grain during milking and always has access to the outdoors. We are proud of our delicious cheese, made with utmost care.  We hope you will enjoy them.

 Darkwoods

Our signature goat cheese, The Darkwoods takes its name from the nature conservancy area right behind our farm. A semi soft lactic cheese, it has a smooth and creamy texture with a slight citrus note. With a thin dark layer of vegetable ash hidden behind a bloomy rind it is becoming a fast favourite.  

Let this cheese warm to room temperature for the best flavour. 

Pairing : Blackberry or Plum, sparkling wine or cider,

Beer Pairing: Hefeweizen, or Fruit Sours 

 

Rosebud

 A hidden gem of a lake near Salmo, and the name of our signature Sheep cheese. Rosebud is made from Pasteurized sheep milk, and has a  a white bloomy rind. It has a creamy, and buttery flavour with a slight hint of mushroom from the rind. It is also very versatile, and a perfect addition to a charcuterie or cheese board.  

Let this cheese warm up to room temperature for the best flavour. 

Pairing: Peaches, dried fruits, nuts

Beer Pairing: Saisons, Pale and Amber Ales  

Plateau

A Camembert style Sheep cheese, Smooth and buttery, perfect for sharing. The Plateau pairs well with seasonal berries, tree fruits and fresh breads.

Pairing:  plum, cranberry, fresh breads, 

Wine Pairing:  Riesling

Two Hearts

Two Hearts is a 50/50 Mix milk Brie style cheese made with our own Sheep and Goat milk. It has a delicate flavour with a silky texture in an adorable heart shape.

Let this cheese warm up to room temperature for the best flavour. 

Pairing: Jams, Berries, dried fruits & nuts

 Pairing: Saisons, Pale and Ice wine 

 

Chevre

Our Fresh Goat cheese, this chevre is made weekly in small batches and needs to be eaten fresh! Delicious creamy and versatile it is a perfect snack for touring, spreading on a baguette for a quick lunch, or turning salads into features! Can be paired with savoury or sweet.  

Goes amazing well with citrus, berries, and french breads. 



Brebis

Our Fresh sheep cheese, this chevre is made weekly in small batches and needs to be eaten fresh! Delicious creamy and versatile it is a perfect snack for touring, spreading on a baguette for a quick lunch, or turning salads into features! Can be paired with savoury or sweet.  

Goes amazing well with citrus, berries, and french breads. 

Feta

 

 With its creamy texture and tangy flavor, our goat feta is perfect for adding a touch of sophistication to any dish. Whether you're making a summer salad, enjoying it with cucumbers and tomatoes, or sprinkling it over tacos, you're sure to love the taste of Forrest Farm Goat Feta.



Halfway

Our Blended hard aged cheese, made with both sheep and goat milk.

Taking its name from the farms original water source Halfway Creek, this cheese has been aged for a minimum of 2 months, and allowed to develop a natural rind. Halfway blends all the best elements of Sheep and Goat milk. A perfect versatile table cheese, that is a great feature for cheese plates or charcuterie boards, and can be grated over salads, pastas, risotto or french onion soup.
